The cooking class takes place in the heart of Porto Maurizio, Imperia, at Via Martiri della Libertà 136, and lasts approximately four hours. Together, we will prepare traditional Ligurian focaccia. Patti will guide you through each step of the process, sharing the secrets of the dough, proper proofing, and the techniques that give focaccia its characteristic texture and irresistible aroma as it bakes to golden perfection.
Next, you will prepare authentic Pesto al Mortaio using a traditional marble mortar and pestle, discovering how aromas and flavours develop through this centuries-old technique.
Afterwards, you will make fresh handmade pasta from scratch, learning simple and authentic techniques that you can easily recreate at home. To finish on a sweet note, you will also discover Gobeletti, traditional Ligurian shortcrust pastries filled with apricot jam and cherished as one of the region's most beloved homemade treats.
