A great tranquil place to escape to

Pros: It's tranquility, you feel like you are staying in someone's home, not in a corporate institution, it's 5mins from the summer bustle of Carcarsonne
Cons: The rooms really need basic tea and coffee making facilities, and it would be great if the room price included breakfast, update the pool towels
Location: Set within vineyards and rolling hills on the southern edge of Carcarsonne, if you are interested in french history or culture this is a must
Everything about the hotel is understated, the spatial feel, the fantastic food, very drinkable estate wine, great location 5mins out of Carcarsonne (once you find the right roundabout), 10 mins from the airport. It is not a luxurious hotel, it's facilities include a nice pool area, tennis court, snooker room, and small gym and sauna, but I suspect the majority of the people who stay here do so for the tranquility and the excellent restaurant. Unfortunately the majority of the week we stayed it rained for half of it, so the chance of dining in the garden terraces was limited, but the restaurant has a classy quirkiness and a great atmosphere, and one of the best guest menus I have had the pleasure to consume, inclusive of wine. This hotel will not be for everyone as it can feel a bit dated and basic but elegant (it felt a bit like staying in an old relatives castle), but the staff are great and for me it has already got me planning another visit or two.
